About this course

I have made thousands of alcohol-free drinks, and the ones that fail almost always fail for the same handful of reasons. They are too sweet, or too sharp, or they taste like flavored water because nothing is holding the flavor together. None of that is a limitation of going alcohol-free. It is a gap in the fundamentals.

This course closes that gap. We start with balance, the single most useful idea in all of mixology. Then we look at what alcohol was actually doing in a traditional cocktail and how to replace it, because that is the part almost everyone gets wrong. We finish with the short list of techniques that change a drink more than any ingredient ever will.
