Ingredients

  • 2 ozChilled espresso or strong cold brew coffee
  • 1 ozAlcohol-free coffee liqueur
  • ½ ozRich simple syrup, to taste
  • 3Coffee beans, to garnish

The Proportions

  • 2¾ oz Chilled espresso or strong cold brew coffee
  • 1¾ oz Alcohol-free coffee liqueur
  • ¾ oz Rich simple syrup, to taste
  • 3 Coffee beans, to garnish

How to Make It

  1. Chill a coupe or martini glass.
  2. Add the espresso, coffee liqueur, and rich simple syrup to a shaker.
  3. Fill with fresh ice and shake hard for 15 to 20 seconds. The hard shake is what builds the foam.
  4. Double-strain through a fine-mesh strainer into the chilled glass.
  5. Float three coffee beans on the foam to serve.

Why This Works

An espresso martini is really a coffee sour: bitter espresso, a little sweetness, and a rich texture from a hard shake. Take the alcohol out and nothing essential is lost, because the drink was always carried by the coffee, not the vodka.

The signature crema, that pale foam on top, is pure technique. Coffee is full of natural oils and soluble compounds that emulsify when you shake them hard with ice, whipping air into a stable foam. Shake longer and harder than feels necessary, then double-strain so the foam sits clean on top.

Use real espresso or a strong cold brew, and make sure it is cold before it hits the shaker. Warm coffee melts the ice too fast and flattens the foam, leaving you with a thin, watery drink instead of a silky one.
