Why This Works
The mule template — spirit, lime, ginger beer — works with nearly any base, but tequila might be its best partner. Agave's earthy, vegetal character and ginger's heat occupy completely different parts of the palate, so neither crowds the other. The drink reads in layers: earth first, spice second, citrus running through both.
Ginger beer is the engine, and its quality determines the drink. You want real ginger bite — that peppery warmth is what gives the mule its energy and what stands in for the missing alcohol heat.
The half ounce of lime looks minor next to four ounces of ginger beer, but it's the hinge of the drink. Acid bridges the gap between the sweet ginger and the earthy spirit, pulling the two into a single, crisp line. Skip it and the drink splits into halves.
The Alcohol-Free Swap
Alcohol-Free Tequila's agave-forward profile cuts right through the spice of ginger beer — brighter and more complex than a standard mule.
