Why This Works
The martini is the most naked cocktail there is: two ingredients, no citrus, no sugar to hide behind. That makes it the hardest drink to do alcohol-free and the most rewarding when it works, because everything rides on the quality of the gin and vermouth and on getting it properly cold.
Dilution and temperature are the recipe here. Without alcohol to carry the chill and add viscosity, a long stir over plenty of ice does double duty: it softens the drink to the right texture and gets it icy cold, which is most of what makes a martini feel silky. Stir longer than you think, a full 30 to 40 seconds.
A little vermouth is not optional in an alcohol-free martini, it is essential. AF gin can read thin on its own, and dry vermouth adds the wine-like body and botanical depth that give the drink weight. Go slightly wetter than a spirited martini, and a single drop of saline or a dash of bitters rounds out the edges beautifully.
