Citrus Press
Fresh citrus juice is the most important ingredient in the AF Cocktail pantry. A citrus press makes it faster to get more juice from every piece of fruit, with no seeds in the glass. This is a $15 tool that improves every drink you make.
Why it earns its place
Squeezing citrus by hand leaves juice in the rind. A hinged citrus press extracts more juice with less effort and catches seeds automatically. The difference in yield is meaningful — a lemon that gives you ¾ oz by hand often gives you 1 oz through a press. That difference changes drink ratios.
When I reach for it
Every time a recipe calls for fresh citrus. There is no exception to this. Bottled citrus juice is not an acceptable substitute for cocktail use.
Where people usually go wrong
Juicing too far in advance. Fresh lime and lemon juice begins to oxidize and degrade within 30 minutes of squeezing. Juice to order.
"I like to use a simple hinged stainless steel citrus press because it works for lemons, limes, and small oranges without switching tools."
If you're only going to buy one
Chef'n FreshForce Citrus Juicer
Gets more juice from a lime than any hand squeezing method I've tried. The gear mechanism amplifies pressing force significantly.

Questions I hear a lot
Do I need a citrus press to make Alcohol-Free Cocktails?
For any AF Cocktail with fresh citrus — which is most of them — a citrus press makes a real difference. It extracts more juice from each piece of fruit, keeps seeds out of the glass, and makes the process fast enough that you'll actually squeeze fresh rather than reaching for bottled. A hinged press costs under $20 and is one of the best investments in the AF cocktail kit.
What's the difference between a hinged press and an electric juicer?
A hinged press is faster for small quantities — one to three pieces of fruit — and requires no setup or cleanup beyond a rinse. An electric citrus juicer is better for batching larger quantities (say, a pitcher of Margaritas) where you're juicing ten or more limes at once. For single-serving AF Cocktails, a hinged press is the right tool.
What should I look for when buying a citrus press?
A gear mechanism or lever design that amplifies pressing force, a basket that fits both limes and lemons, and a strainer plate that catches seeds and pulp. The Chef'n FreshForce and similar gear-assisted designs extract noticeably more juice than simple hinge designs. Avoid small plastic presses that flex under pressure and don't fully express the fruit.
