Rebuilding the Highballs & Spritzes

After the hard family, some relief. Long, fizzy, refreshing drinks are the easiest classics to make alcohol-free, because the alcohol was doing the least work in them to begin with.

Why these are the easy wins

In a highball or a spritz, most of the glass is not alcohol. It is soda, tonic, or sparkling water, plus citrus and ice. The spirit was a supporting flavor, not the backbone, which means swapping in a good alcohol-free base changes very little. These are the drinks where a blind taster is least likely to notice anything is missing.

They are also the fastest to make and the most crowd-friendly, which makes them the perfect entry point for anyone you are serving. A non-alcoholic Gin and Tonic or a spritz asks almost nothing of you and delivers almost everything.

Build in the glass, and respect the bubbles

These drinks are built directly in the serving glass, not shaken or stirred, so there is very little to go wrong. The one rule that matters is to protect the carbonation. Add the sparkling element last, pour it gently down the side, and stir once, if at all. Bubbles carry aroma and give the drink its lift, and a flat highball is a sad thing.

Ice matters more than you would think here too. Fill the glass completely, because a full glass of ice melts more slowly than a half-full one and keeps the drink cold and crisp instead of warm and watery.

The flagships

The Gin and Tonic is the whole lesson in one glass: a good alcohol-free gin, cold tonic, lots of ice, a lime or grapefruit wedge. The Mojito adds muddled mint and lime over a rum-style base and soda. The Paloma leans agave and grapefruit soda, bright and a little bitter. The spritz, built on a non-alcoholic aperitivo with soda, is arguably the single best alcohol-free drink there is.

  • Gin and Tonic: alcohol-free gin, cold tonic, plenty of ice, a lime or grapefruit wedge.
  • Mojito: alcohol-free rum, muddled mint and lime, simple syrup, soda, built over ice.
  • Paloma: alcohol-free agave spirit, lime, grapefruit soda, a pinch of salt.
  • Aperitivo Spritz: non-alcoholic aperitivo, sparkling water, an orange slice.

Make them your default

Because these are so forgiving, they are what you reach for when you want a good drink with no fuss, and what you serve when you want everyone to have something real in hand. Keep a bottle of aperitivo and a good gin on the shelf and you can produce a genuinely lovely drink in under a minute.

They are also the best proof of the whole idea behind going alcohol-free with intention. Nobody sips a well-built spritz and feels like they are missing out. They just feel like they have a good drink.
